Slow cooking chicken works a treat in a whole host of dishes, from curries to casseroles. You can even roast a chicken in the slow cooker! Our favourite recipe is this sweet and sour chicken. Slowly simmering all the ingredients results in a gorgeously tender and intensely tasty dish.

Food Optimising casseroles and stews are perfect for the slow cooker. Coming home to this melt-in-the-mouth medley of beef, carrots, onions and button mushrooms is just the thing to warm the cockles.
If you’re looking for a vegetarian Slimming World slow-cooker recipe, just replace the beef with your favourite meat-free sausages.

Vegetable and lentil lasagne

If you’ve never made lasagne in a slow cooker, prepare to be converted! Slow cooking makes the Mediterranean veg meltingly tender and turns this vegetarian dish into something truly special. Here’s what to do:

ready in 3 hours
What you need:
1 aubergine, cut into chunks
2 red onions, cut into wedges
2 red peppers, deseeded and cut into chunks
4 garlic cloves, finely chopped
low-calorie cooking spray
700g jar passata with onions and garlic
150ml hot vegetable stock
3 courgettes, sliced
2 x 400g cans green lentils, drained and rinsed
12 dried lasagne sheets
400g fat-free natural Greek yogurt
large pinch grated nutmeg
1 tsp ground cinnamon
1 tsp ground cumin
2 eggs, lightly beaten
50g Parmesan, or vegetarian alternative, finely grated
mixed salad leaves dressed with lemon juice, to serve
What you do:
1. Put the aubergine, onions and peppers in your grill pan, sprinkle over the garlic and spray with low-calorie cooking spray, then grill under a medium-high heat for 10 minutes, turning once.
2. Heat the passata and stock in a large pan, add the courgettes and lentils, season lightly and bring to the boil. Stir in the grilled veg.
3. Layer the sauce and the lasagne sheets in your slow cooker, three times, finishing with a layer of sauce, cover and cook on Low for 5-6 hours.
4. Put the yogurt, nutmeg, cinnamon, cumin and eggs in a bowl, season lightly and whisk. Pour over the lasagne sheets, sprinkle with the cheese and re-cover. Cook on Low for 45-60 minutes, then serve hot, with the salad.
