Low-calorie cooking spray

120g baby spinach

2 small garlic cloves, crushed

450-500g lean pork fillet, visible fat removed

5 slices Parma ham

300g thin-stemmed broccoli

400g cherry tomatoes on the vine


1 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the spinach to the pan and toss until wilted. Add the garlic and stir-fry for 30-40 seconds. Transfer to a sieve set over a bowl, press out as much water as you can from the spinach, then set aside.

2 Tear off a large piece of cling film, a little longer than the pork fillet. Lay the Parma ham on top, at right angles to the longer side and overlapping slightly (when all laid out, the ham should be about the same length as the pork).

3 Using a sharp knife. slice down the length of the pork, cutting about halfway into it. Stuff with the garlic spinach, then close up the 2 sides_ Lay the pork on top of the ham, cut-side up, then bring the ham up around the pork to enclose it. Use the cling film to tightly wrap up the fillet into a cylinder. Chill for 3 hours. or overnight.

4 When ready to cook, preheat your oven to 200°C/fan 180°C/gas 6. Spread the broccoli and tomatoes on a large, nonstick baking tray, making room in the middle for the pork. Remove the cling film, then sit the pork in the middle of the tray, cut-side down. Spray everything with a little low-calorie cooking spray and roast for 30 minutes.

5 Remove the pork from the oven and leave to rest for 5 minutes while you return the vegetables to the oven and cook for a further 5 minutes. Slice the pork into 12 pieces and serve 3 per person with the veg and boulangere potatoes and fennel salad.
