Ready in 30 minutes


Low-calorie cooking spray

2 onions, finely sliced

2 courgettes, roughly chopped

4 garlic cloves, crushed

300g runner beans, trimmed and sliced into short lengths

400g can chopped tomatoes

500l vegetable stock

400g can borlotti beans, drained and rinsed

150g dried orzo pasta

15g fresh basil leaves, to serve


1 Spray a large, lidded, non-stick pan with low-calorie cooking spray and place over a medium heat. Add the onions, courgettes and garlic, and stir-fry for 5-6 minutes, adding a splash of water if the garlic starts to colour. Add the runner beans, tomatoes, stock and borlotti beans, and bring to a simmer. Partially cover and gently simmer for 20 minutes.

2 Meanwhile, cook the orzo according to the pack instructions, but for 3 minutes less. Drain and leave in a colander while the stew finishes cooking 3 Stir the orzo through the stew (where it will finish cooking) and season to taste.

Top with the basil and ladle into 4 bowls to serve.
