This thick soup is so good on a cold day (and it was -4 this morning!) to be honest I made it today when I only had leftovers but wanted a filling soup to take to work for lunch .I looked to see what I had in and was thinking what could I make ? I had a play around with ingredients and the result was really tasty and very economical too.
Ingredients:
2 large carrots (diced)
1 large onion (chopped)
2 sticks celery (chopped)
2 pints veg stock
1 can chopped tomatoes
2 tbsp tomato puree
4oz ham (chopped )
1 tsp oregano
2 cloves garlic
spray oil
4oz dry spaghetti
1 can haricot or cannelinni beans (drained)
salt and pepper
Method:
Spray a large saucepan with the oil and add the onion, celery, carrot and oregano and cook on a low heat until soft .
Add the ham, stock, tomatoes , tomato puree, garlic and bring to the boil once boiling reduce the heat a little and add the pasta .
Once pasta is cooked add the beans and then cook for a few minutes and season to taste with salt and pepper.
Very filling and syn free on extra easy : )
